Which version of the game you choose to play is up to you. The older version currently has more content, but it has been abandoned and will not be updated again. At the same time, it is more difficult in the gameplay. On the other hand, the new version is easier to play and it has less content than the previous version, but it will be updated.
Regarding NTR, it depends on your personal definition of NTR. Some players consider the contents of the previous version as "Not NTR at all", and others consider this amount as "too much". So it depends on you. But in response to you, I must say that some of what is considered as NTR in this game is unavoidable (at least in the previous version), but the rest of it is avoidable based on how the players play. In the new version, based on what has been published so far, no content has been published in this category.
If you haven't played this game before and you don't know anything about it, I suggest you to use the new version of the game.

One one of the Eric paths they have some interaction, but nothing that brings their genitals together.

At this early stage of their relations, original BB Ann used to go berserk after Max for his "mere stroll" by Bathroom glass doors.
I wonder what sort of reaction on Ann’s part Alexey prepares for this sort of …mischief.
It can’t be mere spanking or something like that.
I understand the urge to faster the slowburn given it is BB iteration Number X. I welcome it.
Hopefully, Alexey will not go too fast too far, however. As the practical matter, this kind of story essentially ends itself the moment two leads conjoin genitals.

Man of the House has a similar setting and of course Glamour and other BB variants. No More Secrets also has a similar family setup, but many more characters.

the biggest problem of this game is the author. renpy.block_rollback is everywhere, almost every dialogue ends with this line implemented. and the insane amount of grind of course. looks like the author hates players.
You can turn rollback on in the legacy version, and I believe even the Rebuild as well. Besides, it's looking like Aleksey is cutting down on the grind in Rebuild. It's still there, but nowhere near as bad as legacy or especially the original by DarkSilver. You couldn't even rollback in the Original.

What you say sounds a lot more like Glamour.
I'm suspecting he isn't talking about BIBOAS at all. Except from keeping the girls happy there is not much grind, even in the legacy version. And as you said, Rollback works just fine.
I don't see any option to install a camera in the bathroom. I did install the walkthrough mod, and finished all the events (v3.0). I can't seem to get the following to show up:
buying a camera to install in the bathroom
asking Lisa if she has become friends with Olivia
buy and give Alice an erotic romance
and how often do i have to watch tv with mom?

you can't do any of this yet because it's not yet in the game.
but what you can do is to read the last 30 pages of this forum where this is explained on almost every page
