You're probably right. I did notice recently how some random asset had been clicked to render at subd level 5. I rarely ever change settings but maybe as I drag my mouse over things when I'm half asleep doing stuff. I'll just go thru all the settinga to double check them.
I've had something similar to this before. Every scene I tried to render would cause my system to out of RAM and VRAM then freeze/crash Daz. All characters (previously made and even base Genesis 8.1 figures) were loading with a subD level of 5; even if you opened a character, changed back to subD 3, saved then reloaded, it would be set at level 5 again.

It turned out to be a bugged character that was causing all others to load at subD 5. It took a while to find which one it was, but after the character was deleted everything was defaulting to SubD 3 again and Daz was no longer crashing.

Strangely enough, the render involved a character asset I'd never used before.
I'd also loaded another asset's skin onto him. I'm assuming that was the issue.
I never used him again and it hasn't happened since.
I only CPU render as I use a 2018 Mac Mini with just 16Gb of RAM.

Can anyone suggest a high quality visual novel made with simple renders?

Kind of like these renders I knocked out very quickly , with basic assets to speed up the process.
But also kinda seem convincing enough lol. I know they're super basic, I just want to start understanding the process of conversational interactions.

I want to start messing with Ren'py now. I feel it's time to shift my ass into gear for 2025.

Sorry I can't help you with the VN, but I was wondering - what is the model used for the female in these renders? I really like her.

It's FN Alice Gen 9.
You have to be careful though, as her joints are awful.
Same with her chest, which goes all weird.
She's lovely, but so much hassle to at times.
The other issue I have with her is expressions.
Oh, and her bloody armpits are terrible as well.

But I love her, so struggle on!

Just make sure to keep an eye on the limb joints once you apply a pose.
They seem to snap to very extreme bends.
Mess with the skulls too, as the gap from the ear to eye is absurdly exaggerated for my liking.
Forearms also seem quite odd. I love the skin on them, though I'm not at a level to mess with skin.
That's an art in itself.
