I feel like size difference grabs dont work. I put them as options on my character and they never actually show up in game, its just some other random move. I've tried making my character big (with the experimental slider) and a roster character as small as possible and it still doesnt work
Characters have a separate size category that's unrelated to the sliders. I believe by default, everyone is only on the standard size, and opposing characters have to be on different sizes for the size difference moves to trigger, else it substitutes it for another move.

Activate cheats first by pressing F1 for the console, and entering:

cheat_cmds

Then, you can change a character's size (acquired from the roster) by going to the customization screen and using the cheat:

set_size_category [Number] with the numbers applicable being -1, 0 and 1 for small, standard and large respectively.

Editing and modding your own units and setting each character's size category via the game files also works, particularly for non-generated characters.

The random characters in "exhibitions" are sometimes generated with unit size 1 (large). This didn't use to be a problem. Any idea of where I can change/modify this? I'd like all exhibitions to be regular size

They don't in the vanilla game. You must have installed a mod that adds a large character type to the opponent pool.
