There are 2 PDF walkthroughs and URM is very friendly with the game so a walkthrough mod is just lazy handholding at this point.
Ep 8 is split into multiple parts because it's fucking huge and we'd be waiting for years for the whole thing (which would lead to burnout and lost interest). Breaking large projects into smaller chunks is just smart development. You handle bugs in batches, you keep interest on your product, and gives you the ability to look at a massive project on a smaller scale.

The use of the "Sancho Mod" has already been answered many times in this thread... Perhaps its creator is no longer with us... You can still use this great mod for Season 1 (0.7b) on its own or in combination with the official walkthrough... Another modder has "picked up the fallen flag", see the Multi-Mod (Sancho mod) thread at the link in the OP for details.
Well for now, just use URM. This powerful tool won't break your save files, but will allow you to play the game without waiting for Tess to write a 0.8.2 WT or for a new modder to create a replacement for the Sancho mod.
So less panic and more reading this thread...Everything is solvable, all questions have answers. The main thing is not to be lazy and read. Enjoy the game.
I've done one playthrough so far today. Started with my favorite, the save I called Scorched Earth. It involves a relatively evil Kane, a very Evil Olivia, (she goes full murderess, demoness, basically if there's an evil flag she's tripping it) evil Dominique, and choosing Chloe (yuck) to manage the pod based on her connection to Dominique. (Sorry Angelica, I promise you're the pod manager in every other route.)
Some of this was also in the test version but I'm doing individual spoilers, just things I thought of in the middle of scenes. Obviously this is spoiler territory.
As for Tess possibly dropping development, I don't think it come to that. At least, I hope not. I think a few days off post release will help reset her and hopefully there's enough positive support that she'll get back to work with some of the newer safeguards in place (like having her Patreon ran by someone else, having her messages filtered, etc). If Tess drops development, not only is it disappointing for quite a few people, I would think it could impact Anais's VN indirectly.
Given the shit that happened to the dev of Love by the Water...and the 'male' dev of Detective Necro....one can only imagine what she may have to deal with. I think 5 days away off the internet is probably what is needed at this point and then move forward again with a clearer head.
Have you seen the other men in this? The MC, on the dom route, is routinely told that he's more impressive than most other men in the world. There's no man worth sharing with even if I wanted to.

Oh I dunno JP...these folk (I'll be polite and bite my tongue)....I bet they'd absolutely LOVE Harry and his brother, they fit every sharing trope going!
