Maybe (don't hold your breath) it'll be re-added in the future. There was also a very old doggy-style scene that was removed from the 2D version a while back and the newest RE update (5 days from now) we're getting a brand new doggy-style scene. So it's not outside the realm of possibility - though nothing has ever been said about the scene in the gif specifically and the focus right now seems to be more on new features rather than re-implementing old features.

The scene from gif is present in final 2D version, you unlock it as night crawling after using the sleep medicine multiple times (2 or 3, not remember).

was this replaced by "sleep technique" ? If not, how do I progress this part. it seems that I can only proc the first stage at day 11-12 (i think) then nothing like it cut off content.

2. how do progress from sleeplocation: couch to bed like in the old version?

Looking at the devs page, they're focusing primarily on adding more scenes to the main girl, but they have shown sneak peeks periodically on the clerk, so she is probably being worked on in the background.
