The update that should have been released in January finally comes out in May, and I wonder, does this mean that the development of chapter 6 will be advanced enough so that we won't have to wait another 6 months? or am I just dreaming?

It means that future content will take longer and longer to release. Once they hit it big, it's very common for this type of developers to milk as much money from Patreon while doing as little work as possible.
