This is a known problem with this version. In order to get the new map and scene you have to either talk to Zaria and cheat or restart the game and play from the beginning

that's known bug with previous saves, to unlock new content you have to "cheat" at Zaria, or delete previous and start new save
Try to get the paddles. After a few upgrades, they are by far the best weapon.

As the previous post said it's not a minigame but rather the game itself, no there's no real way to skip it in game. You can make it much easier however if you were to use the coin cheat version, I suppose you could use cheat engine.
